I recently made a very non-spooky recipe: Cauliflower-Bacon-Cheddar Soup aka Baked Potato Soup sans Potato
I found this recipe on Iowa Girl Eats and, like all of her other recipes, it did not disappoint. I was even able to break my soup can’t be a complete meal rule. This left me (and even Matt!) completely satisfied and even too full for dessert. I know, shocking!

This soup had all of the yum of baked potato soup with none of the guilt. Well, unless you are me and topped the soup with way more cheddar than appropriate.
I even had some left over soup so I was able to enjoy a mini round #2 with a peanut butter and guava jelly sandwich for lunch.
If you haven’t tried guava jelly yet, you need to. SO GOOD.
This morning I ran out of my peppermint mocha creamer. Yes, I know, I went through that way faster than anyone should go through creamer. So, obvi, I had to stop at the grocery store on my way home so that my morning cup of joe could be filled with pepperminty goodness. And one last bag of candy for good measure…
How do you feel about cauliflower?
I think its so wonderful and underrated. It’s great as a potato substitute.
What is your favorite kind of jelly?
My guava is on its way out and I’m always looking for the next great jelly/jam…
Do you over or underestimate how many trick or treaters you will get?
Last year I underestimated and felt like the Halloween Grinch when I had to tell kids I ran out. Never. Again.
