Look homeless, eat rich

Now that I am done rambling on and on about Groungagement Day (see what I did there?) and the rest of our St. George Island weekend, I can get back to letting you know all of the super boring, everyday details of my life. So let’s rewind to Friday evening. Last week I was craving some pad thai and finally got my butt into the kitchen Friday to make it. This  recipe was super easy and really delicious. Everyone should make this right now.

Normally on Superbowl Sunday I am in the kitchen all day prepping dips and finger foods but since we were busy getting engaged, we got back into town with only enough time to swing by Publix for a few things before our friends came over. I knew I would have enough time to make one thing so I decided to go big. I figured that a proposal and the Superbowl was the perfect excuse to make the ridiculously indulgent Peanut Butter Chocolate Chip Pound Cake from my Friday Favorites.

obThis cake was good but veryyyy rich and everyone needed milk to get it down. I think I would have preferred it with a chocolate sauce instead of the peanut butter glaze. Or maybe just less peanut butter in the actual cake. I will probably not make it again but if you are a HUGE peanut butter fan, it’s worth trying.

Between being too excited to sleep Saturday night and staying up late for the game Sunday, I was a walking zombie on Monday. Matt and I had every intention to do our long run Monday after work but when Matt came home I was already in PJs on the couch on the phone with my sister about venue options. Finally her job as an event planner is beneficial to me ;) I was able to enjoy a solid two days before I started to stress about the monster size of our families. Bye bye intimate affair, hello Barnum & Bailey.

Around 8pm we realized we had not eaten dinner and had no food in the house (except leftover PB cake). Matt asked if I would ride with him to pick up some food. I agreed as long as I could stay in the car. Apparently Matt didn’t pay attention to my outfit before we left, but he definitely noticed when we got back home:

  1. I made the cake after seeing it here as well! It was very, very dense. But came out SO perfectly pretty. I still want coffee cake though. That is next on my list.

    • Our friend broke his plastic plate trying to eat it bc it was so dense lol I could only finish a few bites but man it was a gorgeous cake!

  2. Bahahahahhahaha I love your outfit! I’m actually giggling to myself right now. Awkward…. I think it’s pretty cute. It’s fine. I look like a scrub except for the 3 hours I’m in class a day. And if that pound cake was like chocolate or chocolate chip, I’d totally eat it. I’m not a PB fan but it looks delicious!

  3. I really like pad thai, but I’m more of a thai curry fan. I LOVE green curry with tofu and vegetables over jasmine rice. Yum! My favorite loungewear is just a comfy t-shirt and maybe some big sweats. There are two times during my day where I like to make myself look as socially unacceptable as possible: during my run (so I don’t get kidnapped) and when I’m at home (because no one can judge me).

    Your outfit reminds me of myself.. most days I try to dress in a way that makes it unacceptable for me to be in public just because it’s sooo comfy :)

  7. Ohh the cake looks so good! I know what you mean though about the peanut butter because it can be a little dry in the throat. Also, I love pad thai. I’ve never thought about making it before but I’ll have to give that recipe a whirl :)
