I know I am supposed to pretend that I only eat mushrooms and chia seeds but this girl loves tailgate food. French onion dip? By the spoonful. Jalapeno poppers? Can’t get enough. Potato skins? Who are you kidding, of course I will be eating those!

But I am over here planning out my football menu from now until the Superbowl. So many bad for you foods, so little time…
To kick off the NFL Football season last Thursday I made Matt the manliest meal I could think of:
Sloppy Joes with Tater Tots
I tried to healthy this up but there is only so much you can do to some dishes. I’m not losing any sleep over it though, they were delicious and perfect for watching my main man, Payton Manning throw SEVEN touchdown passes. Ok, to be completely honest, I only stayed awake for one touchdown. When the NFL starts playing games at 4pm, I will stay up for the whole game. Until then, I will listen to Mike & Mike in the morning to get the details I missed.
Now back to the Joes….
* 1/2 large Vidalia onion, diced
* 1 Tbspn minced garlic
* 1 lb organic ground beef
* 1 Tbspn. chili powder
* 1 tsp pepper
* 1 Tbspn paprika
* 1 tsp salt
* 1 tsp freshly ground pepper
* 1/4 cup ketchup
* 1 Tbspn Dijon mustard
* 1 Tbspn Worcestershire sauce
* 1 Tbspn tomato paste
* 1 tsp red wine vinegar
* 1 (8 oz) can tomato sauce
Sautee onions and garlic until they start to soften. Add the beef and break up using a wooden spoon. Cook until browned all over and then add chili powder, crushed red pepper, paprika, salt and pepper. Cook a minute more.
In a small bowl, whisk together the ketchup, mustard, Worcestershire sauce, tomato paste, vinegar and tomato sauce. Add to the beef mixture. Cook on low until reduced (about 5 more minutes)
We used whole wheat sandwich thins as buns and topped our Joes with shredded cheese (Colby for me, Monterey Jack for him) and enjoyed every meaty bite.
On the side we had a cucumber+avocado salad and sweet potato tater tots. There is nothing in the world that is better than tater tots and if you try to convince me other wise you will lose that argument.
PS I have decided while writing this post that I will share my favorite “football” eats with you weekly during football season so that you too can be happy. I know, I know. I am a true humanitarian.
